How to make whipped cream – Easy way!
Use cold heavy cream. The colder it is, the better it will whip up. Cold cream makes the whipped cream light and fluffy. If you can, even chill the mixing bowl and whisk in the fridge for 30 minutes or the freezer for 15 minutes.
Whip together the heavy cream, sugar, and vanilla on medium-high speed. This speed is just right for making whipped cream – it adds air to the cream at a good pace. Avoid high speed as it can overwhip the cream, and low speed may not whip it enough.
Stay close! Whipping only takes a couple of minutes, and there’s a short time between soft whipped cream and over-mixed whipped cream. Over-mixed whipped cream becomes lumpy and grainy. The ideal soft whipped cream is smooth and fluffy. Be around your mixer to know when it’s done.
Aim for medium peaks. What does that mean? When you lift the beaters or whisk out of the bowl, a semi-sturdy peak should form on them. It should slightly droop down but still keep its shape.
